Frijoles (Beans)

1 pound pinto beans
2 cloves garlic, chopped
1 teaspoon comino
4 tablespoons chile powder
1 cup salt pork or 12 slices bacon
salt
pepper

Wash and clean one pound of pinto beans. Place in cooker with about 1 1/2 inches water (enough to cover). Boil 30 minutes. Pour off this water. Add more hot water and return to fire. Add garlic, comino, chile powder, salt pork or bacon, salt, and pepper. Let it cook until good and done - about 2 hours. When done, beans should have 1/2 inch of broth above them so that when they cool they can absorb this broth. This makes the beans softer and easier to mash. Let it cool thoroughly before refrigeration.

To refry, place 4 spoons bacon grease or shortening in the skillet and add 4 cups cooked beans. Mash with potato masher. Fry slowly adding salt and pepper to taste and water to get right consistency.
